Blueberry Muffins







Happy Friday!
 Baking at this point of my life is a hobby I love it! It makes me feel happy and love when my family enjoy the treats that I make for them. Today I am going to share my blueberry muffin recipe I hope you try to make it and all I can say is that is very easy to make and you will love it with a cup of tea or coffee! Especially during the weather like the one that we have in Jersey today is cloudy and little chilly. Enjoy them and let me know if you try this recipe.


Ingredients:

2  cups of blueberries (fresh or frozen) I used frozen for mine
2  Large eggs
1 1/2 tsp Baking powder
21/6  cups Flour
1 1/2 tsp Salt
1 1/4 tsp Sugar
2 tsp Vanilla extract 
2 tsp Oil
1/2 cup Butter (unsalted)
 1/2 cup whole milk 

Streusel Topping:

4 tablespoons sugar
1 tablespoon flour
2 teaspoons oil


Instructions: 

1. Preheat oven for 350. 

2. Prepare streusel topping and set aside. (see bellow how to make it) 

3. In a small bowl mix together flour,baking powder and salt. Set aside.

4. In a large bowl, beat butter and sugar until light and fluffy. Add eggs, vanilla and milk. Add flour mixture and stir until just combined. Stir the blueberries.

5. Dive the batter evenly into 12 muffins cups. Sprinkle muffins with streusel topping.

6. Bake at 350 for 20-25 minutes. When the muffins are done cool for a few minutes into the muffin pan before removing to cool on a wire rack. 


Streusel Topping

In a small bowl whisk together sugar and flour. Add oil and mix until mixture has sandy texture.
